3/6/2009 One Day To Go!

It's crunch time now. We're tired, We're cranky, we want this to be over! Hell week Luau week is hard work! There is tons of food to be made, even more decorations to be sorted, hung, nailed, double back taped, stapled, thumb tacked and any other means needed to make them stick!

Tempers are flaring at times and its really to be expected. So many personalities working in such close quarters, all just wanting the day to be over so that they can go home, sit back and put those tired feet up.

We have a gem among us. Ann. Being a former restaurant/bar owner she is our leader in every sense of the word in the kitchen. She knows timetables, when things should be done and not a minute before. She's incredibly organized and runs a tight ship. I am so thankful for Ann. I'd be in the looney bin if it wasn't for her. She's nice, she's funny and she knows kitchen! Ann, a thousand times, no, make that a hundred thousand times,,,,,THANK YOU!

I believe it was Ann who came up with idea of four identical serving tables.

The servers will stand in the "V" and serve the pulled pork and meatballs and then the guests will be on the their own to serve themselves the rest of the way. Each dish or item will have a little printed card telling what it is so that there is no question and the tables are set up exactly the same making it easier for the staff to replenish dishes as needed. We have used these cards at a lot of the functions now and everyone seems to appreciate them. It sure makes life easier for us.

Everything that can be done today has been. The serving bowls are sitting, ready to be filled,

Jars are lined up in groups ready to be opened and mixed together to make a delicious sauce for the meatballs.

Grape tomatoes are all ready, stacked, ready to be washed and put into the veggie trays.

Now if we can just get a good night's sleep.
